Root and tuber crops are plants yielding starchy roots and are used mainly for human consumption, animal feed, as well as manufacturing starch, and alcoholic beverages.From carrots, potatoes, sugar beets to cassava and ginger, root crops provide many of the world's poorest producers an essential source of nutrition.
In Europe, the most important root crops, in terms of area in production are potato and sugar beet. Both require investment in specialised machinery or the use of contractors, and most potato producers require long-term storage facilities and grading systems. The two main challenges for organic root production are disease and nutrient management.
